2 x Fair & Square patties
300g new potatoes, roughly chopped
1-2 tbsp of oil
40g of spinach
2 Eggs (fried)
Knob of butter
10g chives (finely chopped)
Salt & pepper
Boil the kettle and pour contents into a pan on the hob.
On a chopping board, cut your potatoes roughly into chunks with a sharp knife.
Add the potatoes to the pan with a pinch of salt and cook off for 10-15 minutes.
While your potatoes are boiling, place your square patties in a frying pan and cook off for about 15 minutes on a medium-high heat. Keep turning to get an even browning.
Once the squares look golden, use a pair of scissors and cut each patty into 9 smaller squares.
Remove and drain the potatoes and then transfer into the frying pan with the squares. Add the oil & spinach and give a good stir. Fry for a further 5 minutes so the potatoes cook with the meat and the spinach starts to wilt.
In a separate frying pan, add a knob of butter and crack your eggs directly into it on a high heat. Season, then cook to your desired result. Once done remove from the pan with a spatula or fish slice.
Spoon the potato, sausage and spinach mix onto two plates & season. Pop an egg on top of each and then sprinkle with chives.
Serve and enjoy immediately!
