Ingredients

  • 300g macaroni (or any short pasta)

  • 1 pack HECK! Pumpkin Spice sausages, sliced into chunks

  • 250g pumpkin, peeled & diced

  • 2 tbsp butter

  • 2 tbsp plain flour

  • 500ml milk (semi-skimmed or whole)

  • 150g mature cheddar, grated

  • 50g mozzarella (optional, for stretch)

  • ½ tsp mustard

  • Salt and pepper

Method

  1. Cook pasta - Boil macaroni in salted water until just al dente. Drain and set aside.

  2. Soften pumpkin - Boil or steam diced pumpkin until tender.

  3. Cook sausages - Fry sausage chunks until golden and cooked through.

  4. Make cheese sauce - Melt butter in a pan, stir in flour, cook 1 min. Gradually whisk in milk until smooth.

  5. Add cheese - Stir in cheddar, mozzarella, mustard, salt, and pepper until melted.

  6. Blend pumpkin - Mix cooked pumpkin into the cheese sauce until creamy.

  7. Combine - Stir together pasta, sausages, and sauce in an oven dish.

  8. Bake - Cook at 200°C for 15–20 mins until golden and bubbling.
