Ingredients

  • 1 pack HECK! Pumpkin Spice Sausages, sliced into 2–3cm pieces

  • 1 tbsp olive oil or butter

  • 1 onion, chopped

  • 2 garlic cloves, crushed

  • 500g pumpkin, peeled & chopped

  • 250g broccoli florets

  • 750ml vegetable stock

  • 200ml single cream

  • Salt & black pepper, to taste

  • Pinch of nutmeg (optional)

Method

  1. Fry base - Heat oil in a large pan, fry sausages, onion, and garlic until sausages are golden and onions soft.

  2. Add pumpkin - Stir in pumpkin, then pour over stock. Simmer for 15 minutes.

  3. Add broccoli - Cook for 8–10 minutes more until tender.

  4. Finish - Stir in cream, season with salt, pepper, and nutmeg.

  5. Serve - Ladle hot soup into bowls (or a hollowed pumpkin for extra wow) and serve with crusty bread.
