1 pack HECK! Pumpkin Spice Sausages, sliced into 2–3cm pieces

1 tbsp olive oil or butter

1 onion, chopped

2 garlic cloves, crushed

500g pumpkin, peeled & chopped

250g broccoli florets
-
750ml vegetable stock
-
200ml single cream

Salt & black pepper, to taste

Pinch of nutmeg (optional)
Method

Fry base - Heat oil in a large pan, fry sausages, onion, and garlic until sausages are golden and onions soft.

Add pumpkin - Stir in pumpkin, then pour over stock. Simmer for 15 minutes.

Add broccoli - Cook for 8–10 minutes more until tender.

Finish - Stir in cream, season with salt, pepper, and nutmeg.

Serve - Ladle hot soup into bowls (or a hollowed pumpkin for extra wow) and serve with crusty bread.
