Veggie One Pot Pasta

Serves 3/4 


  • HECK meat free.
  • 1 cup spinach, chopped.
  • 2 sliced shallots
  • ½ cup grated mozzarella
  • 2tbsp olive oil
  • 1 cup tomato passata
  • 2 cloves garlic, sliced.
  • 2 cups water
  • 1 tbsp tomato puree
  • 1 tbsp chilli flakes
  • Grated parmesan
  • 2 cups penne or pasta of choice
  • 75ml cream
  • Basil (optional)



  1. To a pan on medium heat, add oil and chop sausages into bitesize, add shallot and garlic and fry for 5 minutes.
  2. Add tomato pure and chilli flakes and stir until all is covered.
  3. Add pasta, then passata and water then cover with a lid, leave to simmer for 10 minutes, occasionally stirring.
  4. Add a splash more water if needed, then cream, spinach and cheese and give a good mix until spinach had wilted down.
  5. Now add a sprinkle of parmesan and some basil to garnish.
