The Classic Salsiccia e Friarielli Pizza (Neapolitan style)

Prep Time: 15min - Cook Time: 60-90 secs for the pizza - Serves 2

This is a very traditional Italian flavour combination - sausage & wild Italian broccoli. It has no tomato sauce, instead it features a mix of flavoursome Friarielli, and a combination of mozzarella and smoked mozzarella. This is a Bianca pizza, meaning it has no sauce.

Ingredients

2 Heck 97% Sausages

1 260g Neapolitan Dough ball

80g Fior Di Latte Mozzarella

10g Smoked Mozzarella (scamorza)

A pinch of grated Hard Cheese

2 handfuls of cooked Friarielli

Method:

  • Precook the sausages and allow to cool, slice into disks.
  • Preheat your pizza oven to 450c
  • Take one 260g Neapolitan dough ball and stretch to around 11”
  • Top with Friarielli, Fior Di latte mozzarella, Scamorza and a good pinch of grated hard cheese, and the sliced sausages cook for 60-90 seconds at 450c, turning regularly.
  • Slice and serve.
