Sweet Potato and Caramelized Onion with Heck 97% Sausages Quiche

Serves 2 

Ingredients:

  • 4 Heck 97% sausages, quartered
  • 4 eggs
  • 200ml whole milk
  • 75g grated mature cheese
  • 1 roll gluten-free pastry
  • 1 red onion, finely sliced
  • 2 tbsp sugar
  • 1 small sweet potato, grated
  • Salt and pepper to taste
  • 1 tbsp olive oil

Method:

  1. Preheat the oven to 200°C (392°F).
  2. Line an ovenproof quiche dish with the gluten-free pastry, trimming any excess edges.
  3. Add baking beans or cover the pastry with foil and add rice to weigh it down.
  4. Par-bake the pastry in the oven for 10 minutes.
  5. In a frying pan, heat the olive oil and sauté the sliced onion until softened.
  6. Cook the quartered sausages in an air fryer at 200°C (392°F) for 15 minutes.
  7. Once the onions are softened, add the sugar and simmer until caramelized.
  8. In a jug, whisk together the eggs, milk, grated sweet potato, cheese, salt, and pepper.
  9. Pour the egg mixture into the par-baked pastry. Add the caramelized onions and sausage pieces, stirring gently to combine.
  10. Top with a sprinkle of cheese.
  11. Bake in the oven for 25 minutes, or until set and golden.
