These easy Spring chicken lettuce cups make the perfect healthy meal or snack. Only a handful of ingredients that pack a punch.
Ingredients
- 1 pack Spring Chicken Mince (500g)
- 4 tbsp Sesame oil
- 2 Little gem lettuces
- 40g Cheddar (grated)
- Handful Peanuts (Chopped)
- 2tbsp Sour cream
Dressing
- 5 tbsp Malt vinegar
- 5 tbsp Light soy sauce
- 4 chopped Coriander sprig
- 1/2 Fresh Red Chilli (finely chopped)
Method

Heat the sesame oil in a pan

Throw in the mince and fry off till crispy

In a small bowl mix half the chilli, malt vinegar, soy and coriander

Carefully peel off the lettuce leaves and fill with the aromatic mince

Top with peanuts, chilli, cheese and sour cream
