Serves 4
Ingredients:
- HECK Chipolatas
- Eggs fried for top (optional)
- Maple syrup
- Chives to garnish
For the pancakes:
- 200g self-raising flour.
- 1 ½ Baking powder
- 25g melted butter
- 200ml milk
- 1tbsp caster sugar
- 3 eggs
- Sunflower oil
Method:
- Add your chipolatas to an air fryer for 10/12 minutes at 180 degrees.
- For the pancakes, to a bowl mix your flour, baking powder and sugar the create a well in the centre.
- Add your eggs, melted butter and milk. Whisk together until smooth and pour mixture into a jug.
- To a flat pan, add a touch of sunflower oil on a low to medium heat and pour 2 circles of mixture (not too much).
- Leave to fry until bubbles appear on the tip of the mixture, then flip and fry for a further 2 minutes.
- Continue this process until you’ve acquired enough pancakes or used all the mixture.
- Pop a pan on medium heat and fry your eggs leaving a nice runny yolk.
- Now time to stack up!
- Stack your pancakes and add your sausage and egg to the top, garnish with chives and cover in maple syrup and enjoy!
