Rashers & Avocado on Sourdough
Packed with protein, this dish tops toasted sourdough with our Smoky Chicken Rashers, a fried egg, avocado, fresh greens, cherry tomatoes and a touch of chili jam. A deliciously satisfying and wholesome meal!
Serves 2

 

Ingredients:

·       4 HECK! Smoky Chicken Sausage Rashers

·       2 eggs

·       2 tsp oil

·       Handful green leaves eg spinach, rocket, mixed salad leaves

·       1 avocado, halved and sliced

·       10-12 cherry tomatoes, halved

·       2 slices sourdough

·       Dollop of chilli jam

·       Salt and pepper (to taste)

Method:

·       Heat the oil in a frying pan and add the chicken rashers, tomatoes and eggs, cooking for 4-5 minutes.

·       Meanwhile, toast the sourdough.

·       Once done, top with green leaves, chicken rashers, tomatoes and sliced avocado. Season with salt and pepper. Add a dollop of chilli jam to finish (optional).
