One-Pan Pork & Cheddar Sausage Tray Bake with Cheese Sauce

Ingredients

  • 1 pack HECK! Pork & Cheddar Sausages

  • 2 medium potatoes, cut into small chunks

  • 2 carrots, sliced into batons

  • 1 small broccoli, broken into florets

  • 1 leek, sliced

  • 1 red onion, cut into wedges

  • 2 tbsp olive oil

  • Salt and black pepper

For the cheese sauce

  • 25g butter

  • 25g plain flour

  • 300ml milk

  • 100g grated mature cheddar cheese

  • 1 tsp mustard (optional, for flavour)

  • Salt and pepper, to taste

Method

  1. Preheat the oven to 200°C. Place the potatoes, carrots, red onion, and leek on a large roasting tray. Drizzle with olive oil, season with salt and pepper, and toss to coat. Roast for 20 minutes.

  2. After 20 minutes, remove the tray and add the HECK! Pork & Cheddar Sausages. Toss everything gently and return to the oven for another 15 minutes. Add the broccoli for the final 10 minutes, roasting until the sausages are golden and the veg tender.

  3. Make the cheese sauce - Melt the butter in a saucepan over medium heat, then stir in the flour to form a paste. Cook for 1 minute, then gradually whisk in the milk until smooth and thickened. Stir in the cheese (and mustard, if using) until melted and creamy. Season to taste.

  4. Serve - Pile the golden sausage and roasted veg onto plates and drizzle generously with warm cheese sauce. Sprinkle with extra cheese or fresh herbs for an indulgent finishing touch.
