Ingredients
- 1 pack HECK 97% Chorizo-Style Sausages
- 2 white onions, diced
- 2 red peppers, diced
- 2 garlic cloves, finely chopped
- 220g baby vine tomatoes, halved
- 800g tinned chopped tomatoes
- 1 tbsp tomato purée
- 1 white wine stock cube
- 2 tsp sugar
- 100g chives, chopped (plus extra to garnish)
- 4 eggs
- 2 tbsp oil
- Salt & pepper to taste
- Buttered sourdough, to serve
Method
- Heat oil in a large pan over medium heat.
- Remove sausage skins by slicing and peeling them off. Crumble the sausage meat into the pan and fry until browned.
- Add diced onions and peppers, cooking until softened.
- Stir in tomato purée, chopped tinned tomatoes, stock cube, and sugar. Mix well.
- Add halved baby tomatoes and chopped chives. Stir, then cover and simmer for 10 minutes.
- Make 4 wells in the mixture and crack an egg into each one.
- Cover and simmer for about 6 minutes, or until the eggs are just set.
- Garnish with extra chives.
- Serve hot with buttered sourdough on the side.
