One-pan chorizo shakshuka

One-pan chorizo shakshuka

Serves 2–4

Ingredients

  • 1 pack HECK 97% Chorizo-Style Sausages
  • 2 white onions, diced
  • 2 red peppers, diced
  • 2 garlic cloves, finely chopped
  • 220g baby vine tomatoes, halved
  • 800g tinned chopped tomatoes
  • 1 tbsp tomato purée
  • 1 white wine stock cube
  • 2 tsp sugar
  • 100g chives, chopped (plus extra to garnish)
  • 4 eggs
  • 2 tbsp oil
  • Salt & pepper to taste
  • Buttered sourdough, to serve

Method

  1. Heat oil in a large pan over medium heat.
  2. Remove sausage skins by slicing and peeling them off. Crumble the sausage meat into the pan and fry until browned.
  3. Add diced onions and peppers, cooking until softened.
  4. Stir in tomato purée, chopped tinned tomatoes, stock cube, and sugar. Mix well.
  5. Add halved baby tomatoes and chopped chives. Stir, then cover and simmer for 10 minutes.
  6. Make 4 wells in the mixture and crack an egg into each one.
  7. Cover and simmer for about 6 minutes, or until the eggs are just set.
  8. Garnish with extra chives.
  9. Serve hot with buttered sourdough on the side.
