Mini Canapé BLT

Makes 20-24 canapés. Serves: 6-8 (as canapés)

These mini BLTs are a classic crowd-pleaser made canapé-sized. Crispy HECK Pork Rashers, fresh tomato and lettuce, and a swipe of creamy mayo come together for the perfect bite for parties, drinks or festive sharing boards.

Serves: 6-8 (as canapés)

Ingredients

  • 1 pack HECK Pork Rashers

  • 1 small gem lettuce or cos lettuce, leaves separated

  • 2 ripe tomatoes, deseeded and finely diced

  • 1 tbsp olive oil

  • Salt & black pepper

Base (choose one)

  • White or brioche bread

  • Mini toast rounds

  • Crostini

Mayo

  • 4 tbsp mayonnaise

  • Optional - squeeze of lemon juice or dash of Sriracha

Method

  1. Cook the pork rashers

  • Heat a frying pan over medium heat.

  • Cook the HECK Pork Rashers until well browned and crispy.

  • Drain on kitchen paper, then cut into small canapé-sized pieces.

  1. Prepare the tomato

  • Mix the diced tomato with olive oil, salt and black pepper.

  • Drain off any excess liquid to keep the bases crisp.

  1. Prepare the base

  • Toast the bread, crostini or mini toast rounds until golden.

  • Cut into bite-size squares or rounds if needed.

  1. Assemble

  • Spread a thin layer of mayonnaise onto each base.

  • Add a small piece of lettuce.

  • Spoon over a little seasoned tomato.

  • Top with a crispy piece of pork rasher.

Serve immediately for the best crunch.
Optional finish - cracked black pepper, micro herbs or a light drizzle of Sriracha-mayo.
