Mac n’ cheese dog

Serves 2 

Ingredients:
  • 4 HECK 97% Pork Sausages
  • 4  hot dog rolls
  • 200g macaroni
  • 1.5 tbsp butter
  • 1.5 tbsp plain flour
  • 400ml milk
  • 150g mature cheddar, grated
  • Crispy fried onions
  • Salt & pepper to taste

 

Method:

1. Cook the sausages in a pan, under the grill, or on the BBQ until golden and cooked through.

2. Meanwhile, boil the macaroni in salted water for about 8 minutes until al dente, then drain.

3. In a saucepan, melt the butter, stir in the flour and cook for 1 minute. Slowly add the milk, whisking until smooth and thickened. Stir in the grated cheese and season with salt, pepper, and a spoon of BBQ sauce (optional). Fold in the cooked pasta and keep warm.

4. Lightly toast the brioche rolls. Pop a cooked sausage in each one. Pile a generous spoonful of mac and cheese over the top.

5. Finish with a sprinkle of crispy onions. Add any extras you fancy – jalapeños, mustard, or pickles all work great.

6. Serve hot and get stuck in.
