Loaded Hashbrown with Chicken Rashers

  • 2 eggs
  • 4 Smokey Chicken Sausage Rasher
  • 2 large hashbrowns
  • 2 tbsp crumbled feta
  • 2 tsp honey
  • 2 tsp chili flakes
  • Handful of rocket
  • Salt and pepper, to season
  • 1 avocado, smashed
  • 1 tbsp oil


  1. Cook the Hashbrowns:
    • Place the hashbrowns in the air fryer at 180°C for 10-12 minutes until golden brown.
  2. Cook the Chicken Rashers:
    • Heat the oil in a pan over medium heat.
    • Add the chicken rashers and fry for 6-7 minutes, turning occasionally, until they are crispy.
  3. Scramble the Eggs:
    • Crack the eggs into a small pan over medium heat.
    • Stir continuously until the eggs scramble and are fully cooked.
    • Season with salt and pepper.
  4. Assemble the Loaded Hashbrowns:
    • Place the cooked hashbrowns on a plate.
    • Spread the smashed avocado evenly over the hashbrowns.
    • Top with the scrambled eggs.
    • Place the chicken rashers on top of the eggs.
    • Add a handful of rocket on top.
  5. Garnish and Serve:
    • Sprinkle the crumbled feta over the rocket.
    • Drizzle with honey and sprinkle with chili flakes.
    • Season with additional salt and pepper if desired.
