Lamb pomegranate loaded flatbreads

Serves: 2

Ingredients:

·      2 HECK Lamb Burgers

·      2 flatbreads

·      ¼ cucumber, diced

·      30g vine tomatoes, quartered

·      40g rocket

·      4 tbsp tzatziki

·      2 tbsp pickled cabbage

·      1 lime, quartered

·      2 tbsp pomegranate seeds

·      225g halloumi, thickly sliced

·      Microgreens, to garnish

·      300g skin-on fries

 

Method:

1. Add the fries to the air fryer at 200°C for 20 minutes, until golden and crisp.

2. Fire up the BBQ and grill the lamb burgers for around 10 minutes, flattening slightly and flipping halfway.

3. Add the halloumi slices to the grill for the last few minutes and cook until golden on both sides.

4. Toast your flatbreads briefly on the grill, just until warmed through.

5. Now build your flatbreads:
Spread tzatziki over the base, then add a layer of rocket. Place your lamb burger on top, followed by a few slices of grilled halloumi.

6. Pile on the cucumber, tomatoes, and pickled cabbage, then load up with a handful of fries.

7. Finish with pomegranate seeds, microgreens and a good squeeze of lime over the top.

8. Wrap it, fold it, or eat it open – just be ready for a flavour overload.
