This Italian Sausage & Burrata Toast is a fresh but indulgent brunch or light dinner, layering juicy HECK Italia sausages with roasted tomatoes, creamy burrata and peppery rocket on crisp sourdough. Finished with avocado and radish for crunch, itβs simple, colourful and packed with flavour.
Ingredients:

2 slices sourdough bread

2 burrata balls

200 g tomatoes, finely sliced

60 g rocket
-
1 avocado, sliced

2 radishes, finely sliced

Olive oil

Salt & black pepper
Method:

Preheat the oven to 190Β°C. Toss the tomatoes with a little olive oil, salt and black pepper, then roast for 15 minutes until softened and slightly caramelised.

Meanwhile, fry the HECK Italia sausages in a pan over medium heat until golden and cooked through. Slice into bite-sized pieces.

Toast the sourdough slices until crisp and golden.

Arrange the rocket on serving plates and place the toasted sourdough on top.

Spoon over the sliced sausages and roasted tomatoes.

Tear the burrata over the toast, then finish with sliced avocado and radish.

Drizzle lightly with olive oil and season with extra black pepper before serving.
