Make-Away Egg & Rasher Muffin
Create a tasty, protein-packed breakfast. These savory muffins are made using our Smoky Chicken Rashers and filled with egg, spring onion, red pepper and a cheese of choice. 
Makes 6

 

Ingredients:

·       1 pack HECK! Smoky Chicken Sausage Rashers

·       4 eggs

·       3 spring onions

·       ½ red pepper, diced

·       30g cheese of choice (cheddar, feta, mozzarella etc)

·       Salt and pepper (to taste)

·       1 tbsp oil

Method:

·       Pre-heat the oven to 180°c (fan) and lightly grease a muffin tray with the oil

·       Place the chicken rashers in each well and form the cups, covering the bottom and sides

·       In a bowl, mix the eggs, spring onion any peppers together and season with salt and pepper

·       Pour the egg mixture into the middle of each cup and top with the grated cheese.

·       Place in the pre-heated oven and bake for 12-14 minutes

·       Serving suggestion: 2 muffins per portion
