Ingredients
• 400–500g pasta
• 10 HECK! Simply Chicken Chipolatas
• 100g kale
• 100g spinach
• 50g almonds & pine nuts , toasted
• 1 clove garlic
• Zest & juice of 1 lemon
• 3tbsp olive oil
• 40g Parmesan
• Salt & black pepper
• 2 handfuls rocket
• Extra Parmesan
Method
1. Blanch the kale for 1 minute, then drain and squeeze dry.
2. To a blender add the spinach, almonds, garlic, lemon zest & juice, Parmesan, olive oil, salt and pepper until smooth and vibrant. Adjust seasoning and consistency if needed.
3. Pan-fry the HECK! Simply Chicken Chipolatas in a little oil until golden and cooked through, then slice diagonally.
4. Cook the pasta in well-salted water until al dente, reserving a cup of pasta water.
5. Toss the hot pasta with the pesto, loosening with pasta water until glossy. Fold through the rocket and sliced chipolatas, then finish with toasted almonds, extra Parmesan and plenty of black pepper.
