Ingredients:
- 2 large slices sourdough
- 4 HECK! pork rashers
- 2 tbsp avocado oil
- 2 figs, thinly sliced
- 6 walnuts, chopped
- 2 tbsp honey
- 2 tsp fresh or dried rosemary
Method:
- Brush both sides of the sourdough slices with avocado oil and toast them in a hot pan until golden and crisp.
- While the bread’s still in the pan, lay two rashers over each slice and press gently—cook rashers-side down for about 5 minutes until the pork is crisp and cooked through.
- Transfer the loaded sourdough slices to plates. Top with fresh fig slices, a sprinkle of chopped walnuts, and a drizzle of honey.
- Finish with a pinch of rosemary over each one for a fragrant kick.
