Fig & walnut pork rashers

Serves 2

Ingredients:

  • 2 large slices sourdough
  • 4 HECK! pork rashers
  • 2 tbsp avocado oil
  • 2 figs, thinly sliced
  • 6 walnuts, chopped
  • 2 tbsp honey
  • 2 tsp fresh or dried rosemary

Method:

  1. Brush both sides of the sourdough slices with avocado oil and toast them in a hot pan until golden and crisp.
  2. While the bread’s still in the pan, lay two rashers over each slice and press gently—cook rashers-side down for about 5 minutes until the pork is crisp and cooked through.
  3. Transfer the loaded sourdough slices to plates. Top with fresh fig slices, a sprinkle of chopped walnuts, and a drizzle of honey.
  4. Finish with a pinch of rosemary over each one for a fragrant kick.
