  • 1 Pack Family Favourite 600g
  • 1 bag Tortilla Chips
  • 1 Onion
  • 2 Red Pepper
  • 1 Tsp Garlic Powder
  • 1 Tsp Cayenne Pepper
  • 1 Tsp Smoked Paprika
  • 1 Tsp salt
  • 1 Tsp Ground Black Pepper
  • 1 Chilli Powder (Optional)
  • 20g Brown Sugar
  • 60g Ketchup
  • 60g Mustard
  • 240g BBQ Sauce
  • Grated Cheddar Cheese
  • Grated Mozzarella
  • Red Leicester Cheese
  • Spring onion for garnish
  • Guacamole, salsa + sour cream to dip

  1. Preheat the oven to 200 degrees and de-skin the sausages by slicing down the middle of the sausage with a knife and then peel back the skin
  2. Pan-fry the de-skinned sausages on medium heat for 15 minutes, using a spatula to break the sausages up into a mince
  3. Dice the onion and red peppers, then pan-fry them on medium-low heat until softened
  4. Mix together the mustard, ketchup, brown sugar, garlic powder, cayenne pepper, paprika, salt, black pepper and chilli powder to form the sauce
  5. Add the onion and peppers to the minced sausage and then mix in the sauce
  6. Grate the cheeses if not already grated and mix the 3 cheeses together
  7. Cover the bottom of an oven proof dish with half the tortilla chips. Then layer with the meat mixture, followed by half the BBQ sauce and then half of the 3-cheese mix
  8. Repeat step 7 and pop the dish in the oven for 10 minutes for the cheese to melt
  9. Garnish with chopped spring onions and serve with guacamole, salsa and sour cream
