Cowboy Pie (Chicken Sausage & Cheesy Mash Topped Pie)

This Cowboy Pie is a hearty, family-friendly chicken sausage pie packed with veg in a smoky tomato sauce and finished with fluffy, cheesy mashed potato. It’s basically a midweek winner: easy, filling, and great for batch cooking.

  • 1 × 340g pack HECK Simply Chicken Chipolatas

  • 1 onion, chopped

  • 1 red pepper, diced

  • 1 carrot, diced

  • 2 cloves garlic, crushed

  • 2 tsp sweet smoked paprika

  • 1 tbsp tomato purée

  • 1 × 400g tin chopped tomatoes

  • 300 ml chicken stock

  • 2 tsp sweet balsamic vinegar

  • 1 tbsp Worcestershire sauce

  • 700 g white potatoes, peeled and cubed

  • Knob of butter

  • 3 tbsp milk

  • 100 g cheddar cheese, grated

  • Oil, for frying

  • Salt & pepper

Method:

  1. Brown the sausages
    Heat a little oil in a sauté pan. Add the chicken chipolatas and brown quickly over high heat. Remove and set aside.

  2. Build the sauce
    Add onion, red pepper and carrot to the same pan. Fry for 3–4 minutes until starting to soften.
    Add garlic, smoked paprika and tomato purée. Fry for 10–20 seconds until fragrant.

  3. Simmer
    Pour in chopped tomatoes, chicken stock, balsamic vinegar and Worcestershire sauce. Bring to the boil.
    Slice the sausages into bite-sized pieces and return to the pan.
    Simmer gently for 15 minutes until slightly thickened.

  4. Mash topping
    Meanwhile, boil the potatoes in salted water until tender (12–15 minutes).
    Drain well, then mash with butter, milk and half the cheese. Season to taste.

  5. Assemble
    Spoon the sausage mixture into an ovenproof dish.
    Spread the mash over the top and sprinkle with the remaining cheese.

  6. Grill
    Place under a medium grill for 8–10 minutes until golden, bubbling and lightly crisp on top.
