Chicken Waffle Brunch

Serves 1 

Ingredients:

  • HECK chicken, red pepper & feta chipolatas
  • 1 tbsp olive oil
  • Vine-ripened tomatoes (on the stem)
  • 1 avocado
  • 1 egg
  • Handful of rocket leaves
  • Handful of chives
  • Sesame seeds and chili flakes (for garnish)
  • 1 tbsp chili jam

Method:

  1. Remove the casing from 3 chipolatas, mash them in a bowl, and press the mixture into a waffle maker. Cook for 5 minutes. Repeat this step for as many waffles as you'd like.
  2. Slice the avocado and sprinkle with sesame seeds and chili flakes. Set aside.
  3. Roast the tomatoes in an air fryer at 200°C for 5–6 minutes, or until softened and slightly charred.
  4. Bring a small pot of water to a boil and add a splash of vinegar. Create a gentle swirl in the water with a spoon, then carefully crack an egg into the center. Poach for about 3½ minutes.
  5. Arrange the waffles on a plate over a bed of fresh rocket leaves.
  6. Top the waffles with the sliced avocado and poached egg. Add the roasted tomatoes and garnish with chopped chives. Finish with a drizzle of chili jam.
