Ingredients:
- HECK chicken, red pepper & feta chipolatas
- 1 tbsp olive oil
- Vine-ripened tomatoes (on the stem)
- 1 avocado
- 1 egg
- Handful of rocket leaves
- Handful of chives
- Sesame seeds and chili flakes (for garnish)
- 1 tbsp chili jam
Method:
- Remove the casing from 3 chipolatas, mash them in a bowl, and press the mixture into a waffle maker. Cook for 5 minutes. Repeat this step for as many waffles as you'd like.
- Slice the avocado and sprinkle with sesame seeds and chili flakes. Set aside.
- Roast the tomatoes in an air fryer at 200°C for 5–6 minutes, or until softened and slightly charred.
- Bring a small pot of water to a boil and add a splash of vinegar. Create a gentle swirl in the water with a spoon, then carefully crack an egg into the center. Poach for about 3½ minutes.
- Arrange the waffles on a plate over a bed of fresh rocket leaves.
- Top the waffles with the sliced avocado and poached egg. Add the roasted tomatoes and garnish with chopped chives. Finish with a drizzle of chili jam.
