This Chicken, Stuffing & Cranberry Toastie is the perfect quick comfort meal — all the flavours of a Sunday roast, sandwiched between two slices of golden, buttery Tiger bread. Using HECK Chicken Rashers for that deliciously smoky, savoury edge, this toastie combines sweet cranberry sauce, herby stuffing and fresh rocket for a satisfying lunch or festive snack. Serve warm with a pot of gravy for dipping and enjoy every mouthful.

2 slices Tiger bread

4 tbsp stuffing

4 tbsp cranberry sauce

20 g rocket

Butter, for toasting

Optional: Gravy, for dipping
Method

Toast the bread

Butter both sides of the bread slices.

Lightly toast them in a pan over medium heat until golden and crisp.

Set aside.

Cook the chicken rashers

Fry the HECK Chicken Rashers in a hot pan for around 5 minutes, until cooked through and crisp.

Assemble the toastie

Spread cranberry sauce on the inside of each toasted bread slice.

Add the stuffing, a handful of rocket, and the cooked rashers.

Press the slices together to make a sandwich.
