Chicken Sausage & Veggie Risotto

  • 1 Pack Heck! Simply Chicken Sausages
  • 300g Risotto Rice
  • 1 Courgette
  • 1 Red Pepper
  • 1 Large Red Onion
  • 180g Spinach
  • 4tbsp Tomato Puree
  • 28g Chicken Stock
  • 450ml Water
  • 30ml White Wine
  • 1tbsp Sunflower Oil
  • Salt & Pepper
  • 15g Flat Leaf Parsley


  1.  In a large pan, add in some oil along with the simply chicken sausages, diced red onion, sliced red pepper, sliced courgette - Allow to simmer on a low heat until the sausages start to brown on the edges
  2. Add in your chicken stock, seasoning, water, wine and tomato puree - Mix together
  3. Add in the risotto rice - stir thoroughly
  4. Cover the pan with a lid and allow to simmer on a low-medium heat. Keep an eye on it and stir occasionally
  5. After about 10-15 minutes of simmering, add in the spinach and re-cover for a further 5 minutes 
  6. Once the rice has softened you’re ready to serve! 
  7. Finish with some fresh herbs
