Enjoy the delicious flavours of restaurant dining in the comforts of your home. We bring you this stunning risotto dish that’s bound to please the most demanding taste buds.
Ingredients
- 1 Pack Heck! Simply Chicken Sausages
- 300g Risotto Rice
- 1 Courgette
- 1 Red Pepper
- 1 Large Red Onion
- 180g Spinach
- 4tbsp Tomato Puree
- 28g Chicken Stock
- 450ml Water
- 30ml White Wine
- 1tbsp Sunflower Oil
- Salt & Pepper
- 15g Flat Leaf Parsley
Method
- In a large pan, add in some oil along with the simply chicken sausages, diced red onion, sliced red pepper, sliced courgette - Allow to simmer on a low heat until the sausages start to brown on the edges
- Add in your chicken stock, seasoning, water, wine and tomato puree - Mix together
- Add in the risotto rice - stir thoroughly
- Cover the pan with a lid and allow to simmer on a low-medium heat. Keep an eye on it and stir occasionally
- After about 10-15 minutes of simmering, add in the spinach and re-cover for a further 5 minutes
- Once the rice has softened you’re ready to serve!
- Finish with some fresh herbs
