Chicken satay naan breads

Serves 4

Ingredients

For the Satay Sauce:

  • 5 tbsp coconut cream
  • 4 tbsp peanut butter
  • 2 tsp curry powder
  • 2 tsp fish sauce
  • 1 tsp salt
  • 2 tbsp lime or lemon juice

Main Ingredients:

  • 1 pack HECK Simply Chicken Mince
  • 2 naan breads
  • 2 packs of microwaveable rice
  • ½ cucumber, finely sliced lengthways
  • 2 spring onions, finely sliced
  • 2 small red chillies, thinly sliced (optional for heat)
  • 2 limes, cut into wedges
  • 2 tbsp oil

Method

  1. Preheat the oven to 200°C (400°F).
  2. In a pan over medium heat, warm 2 tbsp oil. Add the chicken mince and cook for 7–10 minutes, stirring until browned.
  3. While the chicken cooks, mix all satay sauce ingredients in a bowl until smooth.
  4. Add 2 tbsp of the satay sauce to the cooked mince, stir well, and cook for another 5 minutes.
  5. Heat the naan breads in the oven according to the packet instructions.
  6. Microwave the rice as per instructions (usually 2 minutes per bag).
  7. To assemble, place each naan flat on a plate. Spread a bag of rice over each naan.
  8. Top with the satay chicken mince.
  9. Garnish with cucumber, spring onions, and chillies if using.
  10. Serve with extra satay sauce and lime wedges on the side.
