Ingredients
For the Satay Sauce:
- 5 tbsp coconut cream
- 4 tbsp peanut butter
- 2 tsp curry powder
- 2 tsp fish sauce
- 1 tsp salt
- 2 tbsp lime or lemon juice
Main Ingredients:
- 1 pack HECK Simply Chicken Mince
- 2 naan breads
- 2 packs of microwaveable rice
- ½ cucumber, finely sliced lengthways
- 2 spring onions, finely sliced
- 2 small red chillies, thinly sliced (optional for heat)
- 2 limes, cut into wedges
- 2 tbsp oil
Method
- Preheat the oven to 200°C (400°F).
- In a pan over medium heat, warm 2 tbsp oil. Add the chicken mince and cook for 7–10 minutes, stirring until browned.
- While the chicken cooks, mix all satay sauce ingredients in a bowl until smooth.
- Add 2 tbsp of the satay sauce to the cooked mince, stir well, and cook for another 5 minutes.
- Heat the naan breads in the oven according to the packet instructions.
- Microwave the rice as per instructions (usually 2 minutes per bag).
- To assemble, place each naan flat on a plate. Spread a bag of rice over each naan.
- Top with the satay chicken mince.
- Garnish with cucumber, spring onions, and chillies if using.
- Serve with extra satay sauce and lime wedges on the side.
