This dish is versatile enough for a quick weeknight dinner but tasty enough to serve at a family feast. The chicken mince soaks up all the spices, while peas add a pop of sweetness, and fresh coriander finishes it off with freshness.

Perfect with fluffy basmati rice, warm naan, or even stuffed into wraps for an on-the-go option. It’s proper comfort food, made simple.

Ingredients

  • 500g HECK! Simply Chicken Mince

  • 2 tbsp oil or ghee

  • 2 medium onions, finely chopped

  • 3 garlic cloves, minced

  • 1-inch piece ginger, grated

  • 2 green chillies, finely chopped (optional, for heat)

  • 200g tinned chopped tomatoes

  • 2 tsp ground cumin

  • 2 tsp ground coriander

  • 1 tsp curry powder

  • 1 tsp turmeric

  • 1 tsp chilli powder

  • 150g peas (fresh or frozen)

  • Small bunch fresh coriander, chopped

  • Salt & pepper, to taste

  • 100ml water or chicken stock

Method

  1. Cook onions - Heat oil in a large pan, fry onions until golden.

  2. Add aromatics - Stir in garlic, ginger, and chillies. Cook 1–2 minutes.

  3. Brown mince - Add chicken mince, breaking it up until no longer pink.

  4. Add spices - Stir through cumin, coriander, curry powder, turmeric, and chilli powder.

  5. Build sauce - Add tomatoes, cook until they break down.

  6. Simmer - Pour in stock or water, reduce heat, and simmer 10–15 minutes until thickened.

  7. Finish - Stir in peas, season with salt and pepper, and cook 5 more minutes.

  8. Serve - Garnish with coriander and enjoy with naan, chapati, or rice.
