2 tbsp oil or ghee

2 medium onions, finely chopped

3 garlic cloves, minced

1-inch piece ginger, grated

2 green chillies, finely chopped (optional, for heat)

200g tinned chopped tomatoes

2 tsp ground cumin
-
2 tsp ground coriander
-
1 tsp curry powder
-
1 tsp turmeric

1 tsp chilli powder

150g peas (fresh or frozen)

Small bunch fresh coriander, chopped

Salt & pepper, to taste

100ml water or chicken stock
Method

Cook onions - Heat oil in a large pan, fry onions until golden.

Add aromatics - Stir in garlic, ginger, and chillies. Cook 1–2 minutes.

Brown mince - Add chicken mince, breaking it up until no longer pink.

Add spices - Stir through cumin, coriander, curry powder, turmeric, and chilli powder.

Build sauce - Add tomatoes, cook until they break down.

Simmer - Pour in stock or water, reduce heat, and simmer 10–15 minutes until thickened.

Finish - Stir in peas, season with salt and pepper, and cook 5 more minutes.

Serve - Garnish with coriander and enjoy with naan, chapati, or rice.
