Serves: 2–3
Ingredients:
- 1 pack HECK! Chicken Italia rashers
- 1 pack ready-made pizza dough (or homemade if preferred)
- 100g mozzarella, shredded
- 4 tbsp ricotta or cream cheese
- 1 handful baby spinach, chopped
- 1 small red onion, thinly sliced
- 1 tsp dried oregano
- 1 tsp olive oil
- Salt & pepper
- 1 egg (for egg wash)
Method:
- Preheat oven to 200°C (fan 180°C) / 400°F / Gas 6.
- Pan-fry the Chicken Italia rashers in a little oil until golden and just cooked through. Roughly chop them once cool.
- Roll out pizza dough into 2 large rounds or 3 smaller ones on a lightly floured surface.
- In a bowl, mix mozzarella, ricotta (or cream cheese), chopped rashers, spinach, onion, oregano, salt & pepper.
- Spoon filling onto one half of each dough circle, leaving a 1cm border around the edge.
- Fold dough over to make a half-moon shape. Press edges to seal, then crimp with a fork.
- Brush with egg wash and make a small slit on top for steam to escape.
- Bake for 15–20 minutes until golden brown and puffed.

- Rocket salad with balsamic glaze
- Garlic and herb dip
- Extra warmed tomato sauce for dipping
