Chicken italia rasher caesar salad

Serves: 2

Ingredients:

  • 1 pack HECK! Chicken Italia rashers
  • 1 medium romaine lettuce (or 2 little gem lettuces), chopped
  • 1 small bag of croutons (or make your own with 2 slices of bread)
  • 30g Parmesan, shaved or grated
  • 1 boiled egg, quartered (optional but traditional)
  • Caesar dressing (store-bought or homemade – see below)
  • Olive oil (for frying)

 Method:

  1. Pan-fry the Chicken Italia rashers in a little olive oil over medium heat until golden and crispy on the edges. Set aside to cool slightly, then slice or tear into bite-sized pieces.
  2. Toss lettuce in a bowl with a little Caesar dressing (add gradually to avoid overdressing).
  3. Top with: croutons, crispy rashers, Parmesan shavings, and egg quarters.
  4. Drizzle extra dressing over the top if desired.
  5. Finish with a crack of black pepper and serve immediately.

Quick Homemade Caesar Dressing (Optional):

  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 small garlic clove, finely grated
  • 2 tsp lemon juice
  • 1 tsp Worcestershire sauce
  • 2 tbsp grated Parmesan
  • Salt & pepper to taste
  • (Optional): splash of olive oil or water to thin

Whisk together until smooth.
