Chicken Italia Enchiladas

These Chicken Italia Enchiladas are packed with flavour and nutritious ingredients! The homemade enchilada sauce is the star of this recipe. This will definitely be a new meal time favourite.


  • 1 pack Chicken Italia Mince (500g)
  • 3 tbsp Extra Olive Oil
  • 1 Jar Passata
  • 2 Onions, diced
  • 2 Garlic Cloves, crushed
  • 1 tsp Paprika
  • 1/2 tsp Chilli Powder
  • 1/2 tbsp Cider Vinegar
  • 1 Red Pepper, sliced
  • 1/2 Fresh Red Chilli, chopped
  • 1 pack Tortilla Wraps
  • 100g Cheddar, grated
  • 4 Spring Onions
  • 3 tbsp Sour Cream


  1. Preheat the oven to 180°C
  2. Heat the oil in a pan and fry off the onion along with the garlic, chilli powder and paprika
  3. In a different pan with a splash of oil fry off the peppers and the mince
  4. Once the onions have softened slightly, pour in the passata, brown sugar, cider vinegar and fresh chilli—leave this all to simmer
  5. Lay out the tortillas and evenly spread out the mince and peppers all over them
  6. Blend the passata mix till smooth
  7. Roll up the enchiladas and place them in am oven proof dish
  8. Pour over the tomato sauce, top with the grated cheese and back in the oven for 20 minutes.
To serve sprinkle over the spring onions and a dollop of Sour Cream!
