Chicken & hummus brunch

Serves 2

Ingredients

  • 4 HECK chicken rashers
  • 2 eggs
  • 2 slices sourdough, toasted
  • 1 avocado, halved and finely sliced
  • 50g lamb’s lettuce
  • 6 baby tomatoes, quartered
  • 2 tbsp red pepper houmous
  • 2 tbsp chilli jam
  • 2 tsp bagel seasoning
  • 2 tbsp oil

 

Method

  1. Heat oil in a frying pan over medium heat. Cook the chicken rashers for about 5 minutes, flipping halfway.
  2. Lightly toast the sourdough slices.
  3. In the same pan, fry the eggs to your desired doneness.
  4. Time to assemble:
  • Spread chilli jam over each slice of toasted sourdough
  • Layer with chicken rashers, sliced avocado, and fried egg.
  •  Add dollops of hummus, scatter over the tomatoes, and finish with lamb’s lettuce.
  1. Sprinkle bagel seasoning over the eggs and avocado.
