Buttermilk chicken waffles

What you’ll need

·       4 buttermilk waffles (grab 'em ready-made or make your own if you’re feeling fancy)

·       1 pack HECK! Smoky Chicken Rashers

·       4 tbsp maple syrup

·       Buttermilk chicken coating mix (dry)

·       A handful of rocket (for a peppery kick)

 

Let’s get cooking

Coat & crisp those rashers

·       Press your chicken rashers into the buttermilk coating mix — give them a good shake-off.

·       Heat a little oil in a non-stick pan over medium heat.

·       Fry for 3–5 minutes on each side until golden, crispy, and smelling unreal.

Toast the waffles

·       Pop your waffles in the toaster or oven (3–5 mins) until warm and just a bit crispy on the edges.

Build your masterpiece

·       Stack two waffles on each plate.

·       Pile on the hot, crispy rashers.

·       Drizzle generously with maple syrup (about 2 tbsp each).

·       Finish with a handful of rocket to cut through the sweetness.

Fancy it up?

·       Top with a fried or poached egg.

·       Add crispy onions or a splash of hot sauce for extra oomph.

 

That’s it. Sweet, salty, crispy, and a little bit cheeky - proper brunch goals.
