Serves 1–2
Ingredients:
- 4 HECK Chicken Rashers
- A handful of wild rocket
- Fresh basil leaves
- Pepperoni slices
- 1 tbsp red chilli pesto
- 2 slices of hot honey cheese
- 1 tbsp chilli relish
- 1 fresh ciabatta roll, sliced
Method:
- Heat a little oil in a non-stick frying pan and cook the chicken rashers according to the packet instructions until golden and cooked through.
- While the rashers cook, preheat your grill.
- Lay the bottom half of the ciabatta on a baking tray. Spread over the red chilli pesto, then layer on the cooked chicken rashers, pepperoni slices, fresh basil, and top with the hot honey cheese.
- Place under the grill until the cheese is melted and bubbling.
- Remove from the grill, add a generous spoonful of chilli relish and a handful of rocket. Cap it with the top half of the ciabatta and slice in half.
Serve and enjoy!
