SWEET FUSION SAUSAGES WITH ROASTED SWEET POTATO WEDGES & TOMATO PESTO DRESSING

This recipe uses sweet potatoes which are high in fibre, and so easy to cook.  The sweetness of the potatoes and Sweet Fusion sausages balances with the grilled tomatoes perfectly.   And just think of all the 5-a-day veggie goodness you’ll be getting with this plate of plant based yumminess!  Make extra pesto and it’ll keep perfectly for lunch the next day #mealprepgoals

 Sweet Fusion Sausages with Roasted Sweet Potato Wedges & Tomato Pesto Dressing

Serves 2

Ingredients

6 HECK Sweet Fusion Sausages

3 sweet potatoes - skin on

3 large tomatoes

1 tsp basil pesto

30ml olive oil

Sea salt

Black pepper

Rocket or watercress to serve

Steps

  1. Pre-heat oven to 180°c (fan 160°c) and grill to medium heat.
  2. Cut the sweet potatoes into wedges and place on a baking tray. Season with a little sea salt and drizzle with olive oil, then roast in the oven for 25 minutes.
  3. 15 minutes into the potato cooking time, place the sausages under the medium grill and cook for 10-12 minutes, turning frequently.
  4. As the sausages are cooking, quarter the tomatoes, remove the seeds and dice, then mix with the pesto and olive oil, and season to taste with salt and black pepper.
  5. Divide the roasted sweet potatoes between two plates and serve alongside the sausages and a generous handful of rocket or watercress.
