Try our recreation of the viral meatball dish using HECK! Chicken Italia Mince served in a rich tomato sauce served with a generous dollop of cottage cheese, topped with Parmesan and basil.
What You'll Need
- 1 pack HECK! Chicken Italia Mince
- 1 tbsp fresh chives, finely chopped
- 2 tbsp cottage cheese
- 1 tbsp oil
- 1 onion, finely diced
- 1 tbsp tomato purée
- 1 can chopped tomatoes
- 150ml chicken stock
- 100g Parmesan, grated
- Fresh basil, to garnish
Method
- Preheat the oven to 200°C.
- In a large bowl, combine the HECK! Chicken Italia Mince with half of the chopped chives and 1 tbsp of the cottage cheese. Mix until everything is well combined.
- Divide the mixture into 6 equal portions and roll into balls. Place them on a lined baking tray and bake for 20 minutes, or until golden brown and cooked through.
- Meanwhile, heat the oil in a large frying pan over a medium heat. Add the onion and cook for 5-7 minutes, until softened and starting to turn golden. Stir in the tomato purée and cook for a further 2 minutes.
- Pour in the chopped tomatoes and chicken stock, then stir through a handful of the grated Parmesan. Bring to a gentle simmer and cook for 5 minutes, allowing the sauce to thicken slightly.
- Once cooked, carefully transfer the meatballs into the pan. Spoon the rich tomato sauce over them, gently turning the meatballs until they're completely coated.
- Divide the meatballs between two bowls, with 3 meatballs per serving. Top with the remaining cottage cheese and a generous sprinkle of Parmesan. Finish with fresh basil and the remaining chives.
