Vegan Breakfast Courgette Fritters

Prep time: 15 mins  Cook time: 6 mins  Serves: 7 fritters

Our Vegan Breakfast Courgette Fritters are the perfect answer for an easy to make, light meal. Not only are they deliciously crispy on the outside but also fill the room with a fresh minty aroma.


  • 1 Pack Heck Bollywood Bangers
  • 3 Courgettes
  • 3 tbsp Chia Seeds
  • 2 tbsp Lemon Juice
  • 3 Spring Onions
  • Finely Chopped Mint Leaves (around 40 leaves)
  • 3 Garlic Cloves
  • 65g flour
  • Tsp Salt
  • Tsp Ground Black Pepper
  • Vegan Yogurt


  1. Coarsely grate the courgette into a clean kitchen towel and wring out the water, add the squeezed courgette to a large bowl
  2. De-skin the sausages and add to the bowl
  3. Finely chop the spring onions and garlic and add to the bowl
  4. Add the chia seeds, lemon juice, mint leaves, salt and pepper to the bowl and leave for 5 minutes
  5. Heat up a pan with oil then add the flour to the mixture to create a batter
  6. Separate the batter into 7 fritters, add each fritter to the pan and fry for 3 minutes each side on medium heat
  7. Place the fritters on some kitchen towel to absorb any excess oil
  8. Serve with vegan yogurt
