Valentine’s Topped Sourdough Brunch

Serves: 2

Ingredients 

  • 4 HECK! 97% Smoky Pork Rashers (cut into hearts) 

  • 2 large slices sourdough 

  • Small handful of rocket 

  • 3 radishes, finely sliced 

  • 2 eggs (fried into heart shapes) 

  • 1 medium avocado, smashed into guac 

  • 6 cherry tomatoes, quartered 

  • ½ mozzarella ball, sliced into hearts 

  • Balsamic glaze, to garnish 

  • Chilli oil, to garnish 

 

 

Method 

  1. Cook the HECK Pork Rashers in a frying pan over a medium heat until golden and crisp around the edges. Set aside and keep warm. 

  1. Lightly toast the sourdough slices until golden and crunchy on the outside but still soft in the middle. 

  1. To make the heart-shaped eggs, lightly grease a heart-shaped metal cutter and place it into a warm frying pan. Crack an egg into the centre and cook until the white is set. Carefully remove the cutter and cook to your preferred yolk consistency. Repeat with the second egg. 

  1. Spread a generous layer of smashed avocado onto each slice of sourdough. Season with salt and pepper if needed. 

  1. Top with rocket, sliced radishes and cherry tomatoes. Place on mozzarella hearts, then add the crispy heart-shaped pork rashers. 

  1. Finish with a drizzle of balsamic glaze and chilli oil for a little sweetness and heat. 

  1. Top each slice with a heart-shaped egg and serve immediately for a brunch that’s made with love.
