Ingredients:
- 10 Chicken Italia sausages, quartered
- 200g white rice
- 1/2 cucumber, sliced and quartered
- 10-15 cherry tomatoes, halved
- 100g pomegranate seeds
- 1 block halloumi cheese
- 1 lemon, quartered
- 280g natural yogurt
- 6 fresh mint leaves, minced
- 1 tbsp dried dill
- Salt and pepper to taste
- 1 tbsp olive oil
- 4 basil leaves, for garnish
Instructions:
- Cook the Rice:
- Place the rice in a pan and cover with boiling water.
- Boil for 15 minutes, or until tender.
- Rinse the rice with cold water and drain well.
- Cook the Sausages:
- Preheat the air fryer to 200°C (392°F).
- Cook the quartered sausages in the air fryer for 12 minutes, or until fully cooked and golden brown.
- Prepare the Halloumi Crumb:
- Grate the halloumi cheese.
- Heat 1 tbsp of olive oil in a frying pan over medium heat.
- Fry the grated halloumi until it begins to crisp.
- Drizzle a bit of honey over the halloumi and continue to cook until golden and crispy.
- Make the Tzatziki:
- In a bowl, mix the natural yogurt, minced mint, dried dill, salt, and pepper until well combined.
- Assemble the Rice Bowl:
- In a large mixing bowl, combine the cooked rice, tzatziki, cucumber, and cherry tomatoes.
- Transfer the rice mixture to a large serving plate or individual bowls.
- Top with the cooked sausages.
- Sprinkle the crispy halloumi and pomegranate seeds over the top.
- Garnish with fresh basil leaves and lemon wedges.

- Serve immediately, allowing each person to squeeze lemon juice over their bowl as desired.
