Tzatziki Rice Bowl with Chicken Italia Sausage and Halloumi Crumb

serves 6-8

Ingredients:

  • 10 Chicken Italia sausages, quartered
  • 200g white rice
  • 1/2 cucumber, sliced and quartered
  • 10-15 cherry tomatoes, halved
  • 100g pomegranate seeds
  • 1 block halloumi cheese
  • 1 lemon, quartered
  • 280g natural yogurt
  • 6 fresh mint leaves, minced
  • 1 tbsp dried dill
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 4 basil leaves, for garnish

 

Instructions:

  1. Cook the Rice:
  • Place the rice in a pan and cover with boiling water.
  • Boil for 15 minutes, or until tender.
  • Rinse the rice with cold water and drain well.

 

  1. Cook the Sausages:
  • Preheat the air fryer to 200°C (392°F).
  • Cook the quartered sausages in the air fryer for 12 minutes, or until fully cooked and golden brown.

 

  1. Prepare the Halloumi Crumb:
  • Grate the halloumi cheese.
  • Heat 1 tbsp of olive oil in a frying pan over medium heat.
  • Fry the grated halloumi until it begins to crisp.
  • Drizzle a bit of honey over the halloumi and continue to cook until golden and crispy.

 

  1. Make the Tzatziki:
  • In a bowl, mix the natural yogurt, minced mint, dried dill, salt, and pepper until well combined.

 

  1. Assemble the Rice Bowl:
  • In a large mixing bowl, combine the cooked rice, tzatziki, cucumber, and cherry tomatoes.
  • Transfer the rice mixture to a large serving plate or individual bowls.
  • Top with the cooked sausages.
  • Sprinkle the crispy halloumi and pomegranate seeds over the top.
  • Garnish with fresh basil leaves and lemon wedges.
