Ingredients
- 300–400g spaghetti
- 1 pack HECK! Chicken Italia sausages, sliced
- 1 tbsp olive oil
- 1 small onion, finely diced
- 3 garlic cloves, minced
- 150g fresh spinach
- 200ml double cream
- 100ml chicken stock
- 50g Parmesan, grated
- 200g cherry tomatoes
- 1 tsp Italian herbs or oregano
- Salt & black pepper
- Optional: pinch of chilli flakes
Method
-
Cook the pasta
Cook the spaghetti in a large pan of salted boiling water according to pack instructions. Drain and set aside. -
Cook the sausages
Heat the olive oil in a large pan over medium heat. Add the sliced Chicken Italia sausages and cook until golden and cooked through. Remove and set aside. -
Build the base
In the same pan, cook the onion for 4–5 minutes until softened. Add the garlic, herbs and cherry tomatoes, and cook until the tomatoes begin to soften and release their juices. -
Make the sauce
Pour in the chicken stock and double cream. Bring to a gentle simmer, then add the spinach and cook until wilted. -
Bring it together
Season with salt, pepper and chilli flakes (if using). Return the sausages to the pan, add the cooked pasta and toss everything together until well coated. -
Serve
Finish with a generous sprinkle of Parmesan and serve straight away.
Top Tip
Add a splash of pasta water to loosen the sauce and give it a silky finish.
