Turmeric Eggs & Simply Chicken Sausage

Per Serving: 413kcal | 35g protein | 14g fat, of which 4g saturated fat | 34g carbs, of which 5.5g sugars | 3g fibre 

Ingredients

  • HECK!  Simply Chicken sausages x 4
  • Eggs x 4
  • Sourdough toast x 2
  • Sliced fresh Chilli to garnish
  • Milk × 1 tbsp
  • Ground turmeric × 1 tsp
  • Cherry tomatoes × 200g
  • Baby spinach × 100g
  • Olive oil x 1.5 tbsp
  • Salt & cracked black pepper
  • Chilli oil (optional)

Method

  • Chuck the tomatoes into a roasting tin with 1/2 tbsp olive oil, salt and pepper. Roast at 190°C for 15-18 minutes until blistered, jammy and still juicy.
  • Get the sausages sizzling in a pan with 1/2 tbsp olive oil over a medium heat.
  • Cook for 8-10 minutes, turning now and then, until golden and cooked through.
  • Take them out of the pan and give them a quick rest
  • Slice the sausages into bite-sized coins.
  • Whisk the eggs with milk, turmeric, salt and pepper until smooth.
  • Pour into a pan over a low heat and cook gently, stirring constantly, until soft, creamy and just set.
  • Heat the remaining olive oil in another pan.
  • Add the spinach and cook for a minute or two until just wilted.
  • Pile it all up, tuck in, and enjoy a seriously good plate of food.
