Ingredients
- HECK! Simply Chicken sausages x 4
- Eggs x 4
- Sourdough toast x 2
- Sliced fresh Chilli to garnish
- Milk × 1 tbsp
- Ground turmeric × 1 tsp
- Cherry tomatoes × 200g
- Baby spinach × 100g
- Olive oil x 1.5 tbsp
- Salt & cracked black pepper
- Chilli oil (optional)
Method
- Chuck the tomatoes into a roasting tin with 1/2 tbsp olive oil, salt and pepper. Roast at 190°C for 15-18 minutes until blistered, jammy and still juicy.
- Get the sausages sizzling in a pan with 1/2 tbsp olive oil over a medium heat.
- Cook for 8-10 minutes, turning now and then, until golden and cooked through.
- Take them out of the pan and give them a quick rest
- Slice the sausages into bite-sized coins.
- Whisk the eggs with milk, turmeric, salt and pepper until smooth.
- Pour into a pan over a low heat and cook gently, stirring constantly, until soft, creamy and just set.
- Heat the remaining olive oil in another pan.
- Add the spinach and cook for a minute or two until just wilted.
- Pile it all up, tuck in, and enjoy a seriously good plate of food.
