Spring Chicken Mediterranean Style Tart

 This Mediterranean Style Tart using our Spring Chicken Mince, topped with tomatoes, feta and mint is the perfect answer for a refreshing meal on a summer’s day. With every bite you will feel as though your sat in the sun on a Greek island! Serious Mamma Mia vibes!!


  • 1 Pack Spring Chicken Mince
  • Puff Pastry
  • 2 Garlic Cloves
  • 1 Red Onion
  • 1 Tbsp Tomato Paste
  • 1 Tsp Ground Cumin
  • 1 Lemon
  • Hummus
  • 150 g Cherry Tomatoes
  • Feta
  • Mint Leaves


  1. Preheat the oven to 200 degrees
  2. Finely dice the onion and garlic, then pan-fry for 3 minutes on medium heat
  3. Add the Spring Chicken Mince and fry for 10 minutes.
  4. Whilst the mince cooks, roll out the pastry on a floured surface and prick the dough with a fork all over the center and roll the edges. Pop into the oven for 10 minutes on a tray lined with baking paper
  5. Add in the tomato paste and cumin to the pan with the mince and stir
  6. Squeeze the juice of the lemon into the pan and stir
  7. Spread the center of the pastry with hummus, add the mince mixture and top with the feta and halved cherry tomatoes. Pop back into the oven for a few minutes to warm
  8. Garnish with mint leaves
