Simply Chicken Sausage & Rainbow Veg Hash

Ingredients

  • HECK! Simply Chicken sausages × 6
  • Sweet potatoes × 2 (diced)
  • Red pepper × 1
  • Courgette × 1
  • Red onion × 1
  • Smoked paprika × 1 tsp
  • Radish for season
  • Olive oil
  • Eggs × 4

Method

1. Heat the oven to 200°C.

2. Toss the potatoes with oil and a good pinch of paprika, then spread out on a tray.

3. Roast for about 25 minutes until golden, crisp.

4. Get a pan on a medium heat with a splash of oil.

5. Fry the onion, pepper and courgette until soft, sweet and smelling great.

6. Add the sliced sausages and let them sizzle until lightly golden.

7. Tip in the roasted potatoes and give everything a good mix.

8. Cook for a few minutes until the hash is crisp in places.

9. Fry or poach your eggs just how you like them.

10.  Pile the hash high, pop an egg on top, finish with cracked black pepper and a few radishes  then tuck in.
