Simply Chicken Sausage Breakfast Bowl

Ingredients

  • HECK! Simply Chicken sausages × 6
  • Quinoa (dry) × 200g
  • Eggs × 4
  • Cherry tomatoes × 200g
  • Spinach
  • Avocado × 1/2
  • Olive oil
  • Salt & pepper
  • Fresh herbs (parsley or coriander)
  • Radish to garnish
  • Chilli Flakes

Method

  • Rinse the quinoa well under cold water.
  • Add the quinoa to a pan with 400ml salted water, bring to the boil, then simmer for 12/15 minutes until tender. Drain and fluff with a fork.
  • Roast the tomatoes at 190°C for around 15 minutes until soft and lightly caramelised.
  • Heat a pan over a medium heat and fry the sausages until golden and cooked through.
  • Remove the sausages from the pan and slice diagonally.
  • Bring a pan of water to the boil and cook the eggs for 6½ minutes.
  • Cool the eggs under cold water, then peel and halve.
  • In a pan, heat a little olive oil and add the spinach.
  • Cook briefly until the spinach is just wilted, then remove from the heat.
  • To serve, start with a base of quinoa, then arrange the sausage, tomatoes, avocado, egg and spinach in sections. Finish with herbs and a drizzle of olive oil & chill flakes to sprinkle.
