Ingredients
- HECK! Simply Chicken sausages × 6
- Quinoa (dry) × 200g
- Eggs × 4
- Cherry tomatoes × 200g
- Spinach
- Avocado × 1/2
- Olive oil
- Salt & pepper
- Fresh herbs (parsley or coriander)
- Radish to garnish
- Chilli Flakes
Method
- Rinse the quinoa well under cold water.
- Add the quinoa to a pan with 400ml salted water, bring to the boil, then simmer for 12/15 minutes until tender. Drain and fluff with a fork.
- Roast the tomatoes at 190°C for around 15 minutes until soft and lightly caramelised.
- Heat a pan over a medium heat and fry the sausages until golden and cooked through.
- Remove the sausages from the pan and slice diagonally.
- Bring a pan of water to the boil and cook the eggs for 6½ minutes.
- Cool the eggs under cold water, then peel and halve.
- In a pan, heat a little olive oil and add the spinach.
- Cook briefly until the spinach is just wilted, then remove from the heat.
- To serve, start with a base of quinoa, then arrange the sausage, tomatoes, avocado, egg and spinach in sections. Finish with herbs and a drizzle of olive oil & chill flakes to sprinkle.
