Ingredients
· 1 Pack HECK! Simply Chicken chipolatas, Sliced Chunky
· 1 Green Pepper, Diced Thinly
· 1 Yellow Pepper, Sliced Thinly
· 1 Red Pepper, Sliced Thinly
· 2 Red Onion,1 Sliced Thinly, 1 Diced Finely
· 8 Corn Tortilla Wraps
· 2 Small Avocado, Peeled, Destoned, Mashed
· 1 Tomatoes, Diced Thinly
· 10g Coriander, Diced Thinly
· 1 Jar of Salsa
· 1 Red Chilli, Sliced Thinly (optional)
· 1 Green Chilli, Sliced Thinly (optional)
· 120g Strong Cheddar, Grated
· 1 Pack of Fajita Seasoning
· 1 Tbsp Olive Oil
· 1 Lime
Method :
1. To start make the guacamole, in a bowl add green pepper, diced red onion, tomato, coriander, avocado, zest & juice of 1 lime, mix all together & set aside until needed
2. Heat frying pan with olive oil in it over a medium heat
3. Toss sausages, yellow pepper, red pepper, sliced red onion & fajita seasoning in a bowl together, and pan-fry until cooked through, approx. 10-12 minutes
4. Heat tortilla wraps following packet instructions
5. To plate, place tortilla wrap in centre of plate, spread around guacamole, place chicken fajita mix in a line. Top with your guacamole, grated cheese, salsa, lime zest (& chillies if wanting the extra heat)
6. Fold in both sides of the tortilla warp, bring up the bottom & roll up. Enjoy your HECK! Simply Chicken Fajita!
