Sausage & Sweetcorn Fritters

Per Serving: 442kcal | 24g protein | 24g fat, of which 5g saturated fat | 30g carbs, of which 10g sugars | 6g fibre

Ingredients

  • HECK! Simply Chicken sausages × 6
  • Sweetcorn × 200g
  • Mixed Tomato (wedges) x 8
  • Avocado (sliced) x 1
  • Eggs × 2
  • Plain flour × 75g
  • Baking powder × 1 tsp
  • Spring onions × 2
  • Salt & pepper
  • Oil for frying
  • Rocket for garnish

Method

1. Cook the sausages until fully cooked through.

2. Remove from the heat, allow to cool slightly, then finely chop.

3. In a bowl, whisk together the eggs, flour, baking powder and seasoning until smooth.

4. Fold the chopped sausage into the batter.

5. Add the sweetcorn and spring onion and mix until evenly combined.

6. Heat a shallow layer of oil in a frying pan over a medium heat.

7.  Spoon the batter into the pan to form fritters.

8.  Fry for 3/4 minutes on each side until golden and cooked through.

9.  Remove the fritters from the pan and drain briefly on kitchen paper.

10. To serve, place two fritters in the centre of the plate and arrange the tomato and avocado around them. Finish with extra sausage pieces and a handful of spinach to garnish.
