- 6 HECK! 97% chipolatas
- One red onion finely sliced.
- 2 garlic cloves finely sliced.
- 1 red chilli finely sliced.
- 1 tin peeled plum tomatoes.
- 3 eggs
- 1 ½ tsp sugar
- 2/3 slices of sourdough, toasted.
Parsley to garnish


1. Preheat your oven to 200 degrees Celsius.
2. In an ovenproof frying pan over medium heat, sauté the finely sliced onion, garlic, and chili until they start to soften.
3. Cut the chipolatas into quarters directly into the pan and continue to fry for another 5 minutes.
4. Once the sausages are slightly colored, add the tin of peeled plum tomatoes and sugar to the pan. Simmer for 5 minutes.
5. Create three spaces in the sauce and crack an egg into each one.
6. Transfer the pan to the preheated oven and bake for 3 to 5 minutes, until the eggs are cooked to your liking.
7. Serve hot with toasted sourdough and garnish with parsley.
