Pork Italia Ciabatta

Prep time: 5mins - Cook time: 20mins - Serves: 3

Toasted ciabatta bread, filled with pork Italia sausages, pesto mayo, sun-dried tomatoes and gooey mozzarella

Ingredients

  • 1 Pack Heck! Pork Italia Sausages
  • 3 ciabatta rolls, sliced in half
  • 3 tbsp mayonnaise
  • 1.5 tbsp green pesto
  • 8 sun dried tomatoes, chopped
  • 90g mozzarella, sliced
  • Handful of rocket leaves

Method

  1. Set a grill pan on a medium heat, add the sausages and cook for 5-8 minutes until cooked through, turning occasionally. Remove to a plate.
  2. Rub both halves of the ciabatta bread slices with oil from the sun-dried tomatoes then place face down in the grill pan, toast until golden.
  3. Mix the mayonnaise with the pesto until well combined. Spread onto the bottom half of each ciabatta roll. Top with sun dried tomatoes and slices of mozzarella. Place under a preheated grill until the mozzarella begins to melt.
  4. Top with the sausages, a small handful of rocket leaves and the final ciabatta halves.
