Toasted ciabatta bread, filled with pork Italia sausages, pesto mayo, sun-dried tomatoes and gooey mozzarella
Ingredients
- 1 Pack Heck! Pork Italia Sausages
- 3 ciabatta rolls, sliced in half
- 3 tbsp mayonnaise
- 1.5 tbsp green pesto
- 8 sun dried tomatoes, chopped
- 90g mozzarella, sliced
- Handful of rocket leaves
Method
- Set a grill pan on a medium heat, add the sausages and cook for 5-8 minutes until cooked through, turning occasionally. Remove to a plate.
- Rub both halves of the ciabatta bread slices with oil from the sun-dried tomatoes then place face down in the grill pan, toast until golden.
- Mix the mayonnaise with the pesto until well combined. Spread onto the bottom half of each ciabatta roll. Top with sun dried tomatoes and slices of mozzarella. Place under a preheated grill until the mozzarella begins to melt.
- Top with the sausages, a small handful of rocket leaves and the final ciabatta halves.
