Ingredients (Serves 2)

2 HECK! Steak & Butter burgers

2 St Pierre burger buns

150g cooked birria beef

A handful of lettuce

2 tbsp spicy relish

150g sweetcorn

1 large tomato, finely diced

½ red onion, finely diced
-
1 tbsp chopped fresh coriander (optional)

1 tbsp lime juice
-
1 tbsp olive oil

Salt and black pepper
Method

Start by making the corn salsa. In a bowl, combine the sweetcorn, finely diced tomato and red onion, chopped coriander, lime juice and olive oil. Season with a pinch of salt and black pepper, mix well and set aside to let the flavours develop.

Warm the birria beef gently in a small pan over low heat until heated through and tender.

Cook the HECK! Steak & Butter burgers in a frying pan or on a grill over medium-high heat for 10–12 minutes, turning occasionally, until browned and cooked through.

Slice and lightly toast the St Pierre burger buns until golden.

To build the burger, add a layer of crisp lettuce to the bottom bun, followed by the HECK! Steak & Butter burger. Top with a generous portion of warm birria beef, spoon over the fresh corn salsa, and finish with a dollop of spicy relish before adding the top bun.
