Meat Free Bangers, Mash & Veg

Prep time: 15mins – Cook time: 25mins – Serves: 4
Whip up this English Classic! Meat free chipolatas, mashed potato, griddled courgettes and peas.  A quick, easy and satisfying meat-free meal.

Ingredients:

2 tsp vegetable oil

1 pack of meat free chipolatas

1kg of King Edwards potatoes, peeled and cut into large chunks

50g salted butter

1-2 medium courgettes, sliced

3 handfuls of peas

 Method:

  1. Add the vegetable oil to a pan and heat up. Add the meat free sausages to the hot frying pan and cook according to pack instructions.
  2. To make the mash, boil the potatoes in a pan full of water until they are soft in the centre. Drain, then mash and add the butter. Season to taste. Keep warm until ready to serve.
  3. Slice the courgettes and heat a griddle pan with a little oil. When hot, add the courgettes and cook until the griddle pan has made lines on both sides of the courgetti. You can grill the if you don’t have a griddle pan courgettes (you will need to watch them carefully, so they don’t burn). Add 1 handful of petite pois into a small pan with a little bit of water and cook until hot through (about 2-3 minutes).
  4. Serve and enjoy!
