What You'll Need
- 1 large onion, diced
- 1 carrot, diced
- 1 celery stick, diced
- 1 Pack HECK! 97% Pork Sausages, de-skinned
- 200g sundried tomatoes, chopped
- 1tbsp Italian herb seasoning
- 1tbsp smoked paprika
- Salt and pepper, to taste
- 500ml chicken stock
- 500g tomato and cheese tortellini
- 100g crème fraiche
- 100g fresh spinach
- 100g Parmesan, grated
- 20g basil, chopped plus extra leaves for garnish
Method
1. Pan-fry the onions, carrots and celery until soft, then add the pork sausage meat, breaking it up, and cook until piping hot.
2. Add the sundried tomatoes and seasonings, stir then cook for 2-4 minutes.
3. Add the chicken stock and tortellini and simmer for 15-20 minutes.
4. Add the crème fraîche, spinach, basil and parmesan, stir through and increase the heat for 2 minutes.
5. Serve and garnish with extra parmesan and basil.
Top Tip
To store any leftover soup, once it has fully cooled, store in an airtight container in the fridge for up to 2 days. The tortellini will absorb liquid as it sits, so add a splash of stock when reheating and heat until piping hot.
