Ingredients (Serves 2)
- 2 HECK! Chicken Italia burgers
- 2 St Pierre burger buns
- 4 slices halloumi
- 1 avocado, sliced
- 1 tomato, finely diced
- ½ red onion, finely diced
- A handful of rocket
- 1 tbsp olive oil
- Black pepper
Method
1. Start by making the fresh salsa topping. Finely dice the tomato and red onion, then mix together in a bowl with a drizzle of olive oil and a pinch of black pepper. Set aside to allow the flavours to combine.
2. Cook the HECK! Chicken Italia burgers in a frying pan or on a grill over medium heat for 10–12 minutes, turning occasionally, until golden and cooked through.
3. Lightly brush the halloumi slices with olive oil and fry or grill for 1–2 minutes on each side until golden.
4. Slice and lightly toast the St Pierre burger buns until warm and golden.
5. To build the burger, add a handful of rocket to the bottom bun, followed by the HECK! Chicken Italia burger. Layer over the grilled halloumi and sliced avocado, then spoon generously over the fresh tomato and red onion salsa. Finish with the top bun.
